Abstract
Peptide sensor was developed by utilizing two enzymes; aminopeptidase and L-amino acid oxidase. The sensor was constructed by combining a hydrogen peroxide electrode with an immobilized bi-enzyme membrane. The sensor was applied for the monitoring of the enzymatic hydrolysis of milk proteins in a bioreactor system.
