The utilization of a thermophilic Glucose isomerase and a psychrophilic B-Galactosidase in the food industry is discussed. Both enzymes show several advantages for their specific field of use. In the case of ßB-Galactosidase the only possible way to come to an industrial application seems to be the cloning of the enzyme in a microorganism, that is already used in the food industry. ZUSAMMENFASSUNG Die Einsatzmöglichkeiten einer thermophilen Glukose-Isomerase sowie einer psychrophilen ß-Galaktosidase in der Lebensmittelindustrie werden dargestellt. Beide diskutierten Enzyme bringen für die jeweiligen Einsatzmöglichkeiten vorteilhafte Eigenschaften mit. Im Falle der B-Galaktosidase scheint aber die einzige Möglichkeit der industriellen Verwertung die Clonierung in einem in der Lebensmittelindustrie bereits eingesetzen Mikroorganismus zu sein.Citation
